There's a long history between Turkey and Greece which is all very political. Flight restrictions were generally restricted to night flights since the airports are military run and would only allow civilian flights to land at night. These restrictions have been lifted slightly due to the popularity of Turkey as a tourist destination. It's not something I can comment on realy since its a subject I don't know much about even though I've been to Turley 4 times! Entering Turkey as a tourist is easy enough, it's no different that entering any other country really. Just pay your £10 visa when entering the country and you're right for 3 months then.
