Other than just driving up into the White Mountains almost anywhere I'd recommend the region around Kandanos or even just walk from the coast around Agia Marina to Galatas. The coffee shop in Galatas does great Baklava and the little war museum is fascinating. You get the impression that the old guys sitting drinking their Greek coffees actually themselves caught the German paras as they dropped out of the sky on their disastrous invasion.
Landscapes of Western Crete, Sunflower Books, is a good guide to various walks/hikes in the west part of Crete.
