On topic - off island.....there's a restaurant in Chania called Portes which does an excellent saganaki and finishes it off which crispy bacon on top and their prawn saganaki with a tang of chilli.....oooooohhh, roll on June!

The recipe I've used is quite simple (the difficult bit is getting the cheese to the the right texture -ths I CAN'T help you with!)
Slices of Graviera/Gruyere
Dip in lemon juice
Coat in flour seasoned with thyme and black pepper.
Fry in olive oil.
Keep poking with a sharp knife until desired consistency is obtained OR drink enough retsina/raki/Ouzo that it doesn't matter!

My wifes favouritestarter in Skiathos was Shrimp Saganaki. Shrimps, cheese and garlick. bootiful - buddy bootiful.
Hello sunluver, the receipe book that I got the Saganaki receipe from was called Flavors of Greece by Rosemary Barron, it's a paperback, ISBN number 1-56656-551-0, if you go to shopping on the Internet and type these details in, you will find the book, it's also got more delicious Greek receipes in as well, it's a big book and well worth owning.
In fact I've just had a look and WH Smith stock this paperback at £9.09 and Amazon from £10.34.
