Have been to the Sunrise Royal Makadi Bay Hotel (approx 25 mins from Hurghada) twice, although not in December. From what I could see the hotel seems to cater very well for children. They have a very big childrens pool with 4 slides, and is approx 4 foot right the way through, although I'm not sure if this pool is heated during the winter months, which you will certainly need going by past experience in Sharm. The beach albeit, is not huge but the water is gently shelving, easy on the feet and very calm due to being in a bay.
The hotel is all inclusive, and out of our 5 trips to Egypt has been the best by far, with 2 buffets restaurants and 4 a la cartes to choose from (all included in the package)
The hotel is a bit secluded, but is within an easy taxi ride of Hurghada where there are plenty of restaurants and shops should you feel the need of a change.
We did stay at the Dreams Beach Resort in Sharm over New Year 07, and IMO was the worse hotel I could have choosen in terms of food, rooms, pools etc.
Whatever hotel you decide to choose, I highly reccommend that you make sure if has a heated pool.

                We've just come back from Christmas/new year at the holiday village with our 2 yr old. Hotel and facilites for kids (kids clud which run during the day and night - up to 10.30pm!) were wondderful and everyone was really friendly and no tummy problems. I wouldn't hesitate to reccommend it.
Weather was lovely (27 degrees) and just able to swim in the sea. It does have a heated pool, although this too is cool, rather than freezing cold.
