There are some reasonably detailed maps of different areas here:

As I found trying to locate Maps for Kos there are limitations, ie. most have been scanned from less than perfect paper copies, but are usually OK to find bearings and locate accomadation etc.
Ideally as has been offered by the previous answer, the "real" paper versions are prefarable.
