Sounds like a good plan. We have sent a few people to Fuengirola who did excursions there and all said it was good..
Some years ago we did the Granada, Seville and Cordobathing. Personally I found Granada overrated but Seville and Cordoba were
beautiful and worthwhile visiting.
I've spent time in Granada, Seville and Cordoba and love all three cities and think that all 3 are worth a visit but there is no direct train service between Fuengirola and Cordoba. You would have to go via Malaga and change trains there - as far as I can tell the shortest journey time is around 2hrs 20 mins so a day trip there would mean spending close to 5hrs on trains depending on connection times. A direct coach excusion might be quicker.
You can get the train from Fuengirola to Maria Zambreno station in Malage and then get a connection.

I know that excursions are on offer from Fuengirola to Granada but not sure about Cordoba.
