Hi, we would want to fly from Glasgow or Newcastle. Two adults two kids 9 and 6. Preferably self catering and not 18-30 or anything like it. Probably in July/August. Ideally place with a pool and close to beach, restaurants etc. Would also like to see a bit of Bulgaria as well.

It sounds as though Sunny Beach is currently the main 18-30s destination (at least this year), so you may wish to avoid it.
Personally, I prefer the Northern coastal areas and would tend to look at smaller reorts resorts like Sveti Kostantin/Kranevo/Albena but many people like Golden Sands - check out the Balkan Holidays website for some information - they do self-catering accommodation but some of their flights have been somewhat problematic for the past couple of years (you will find many posts on the subject if you search this board).
As far as seeing Bulgaria is concerned, you will find many excursions/trips available from the resorts - or just do your own thing & use local transport, as I do.
