If you are travelling with either Thomas Cook or Thomson's you will have to pay the exit fee in Peso's/Euros's/Sterling. The British firms cannot accept $ as they are not allowed to bank them. Most US travel firms are different and do have banking facilities in Mexico.

Ok I have never paid a departure tax to a tour company at an airport, there is usually a payment window prior to departure.

It depends where you are flying back from. It's sometimes taken at check-in, or just prior to check-in, or from a kiosk / office in the check-in area or just after check-in and before security.

Just got back from Cancun this morning.
Tax is collected by a man with a small desk who literally sits within the tensa barrier queue line for the Thomas Cook check in, and he only accepts Pesos (660) or GB Pounds (£38).
