Have you looked at Paros? We went there May 2004 (my first visit to Greece) and I loved it.
We were after a quieter resort - somewhere still Greek with nice tavernas. We stayed in Parikia which was great, just what we wanted. We hired a car and explored the whole island, there's lots of nice secluded beaches too.
There's lots of places to visit from there - we went to Mykonos, Naxos, Delos and Anti-Paros.

I would also recommend North East Crete, but how about Geogiopoulis lovely place and relatively easy to get to Chania and Rythymnon (make sure you fly to Chania though and not Heraklion.
