As well as all the tours that will be offered to you by your reps (most of them overpriced and easily done under your own steam by using trains, buses or Louages) there are travel agencies in Sousse where you can book independently. It's a long trip and you cover a few hundred miles but the two-day sahara trip is well worth the money. Make sure you take the Red Lizard train option. It is a magnificent trip through the mountains and gorges.
