Cavelossim is the resort most like what you are used to in the North, but I would say give the Benaulim area a go, if you want a real change. The beach has lot's of good shacks, and the village is still very rural.
Haven't stayed here but it looked good, small 19 rooms A/C, TV , Fridge and Pool.

Another choice for the South would be Luisa By The Sea in Cavelossim, it's in a great location and is a lovely complex made up of privately owned villa's, bungalow's and appts. and has two pools I have a few contact details if you are interested. For an idea of the area here are some photo's from a trip based at Luisa http://www.flickr.com/photos/goanjock/sets/72157602342688440/
http://www.saodomingosgoa.com is looking at having a small pool in time for next season but I have no idea whether it will have.
