The Mimosa's website is available in Bulgarian, German. English & Russian, which probably indicates the nationalities of most of their guests.
A great deal of Bulgarian food is very similar to German, many types of sausage/salami, etc., which may lead people to believe that the catering is specifically oriented towards German tourists - traditionally German tourists form the largest group of foreign visitors to Bulgaria.
